- Zest and juice of 1 lemon
- 1 cup chicken broth
- ½ cup heavy cream (or coconut cream for dairy-free)
- 1 tbsp olive oil
- Salt and black pepper to taste

Instructions
- Prepare ingredients by cubing the chicken, halving the cherry tomatoes, and measuring out all liquids.
