  • 2 chicken breasts (cubed or sliced thin)
  • 1 lb potato gnocchi (store-bought or homemade)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare ingredients by cubing the chicken, halving the cherry tomatoes, and measuring out all liquids.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (~5–7 minutes). Set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds until fragrant, then add cherry tomatoes and cook for another 2 minutes until softened.
  4. Pour in chicken broth and bring to a simmer. Lower heat before stirring in heavy cream along with lemon zest and juice.
  5. Add gnocchi to the skillet; cook for about 3–4 minutes until tender. Just before serving, fold in baby spinach until wilted.
  6. Return cooked chicken to the skillet; season as needed and garnish with fresh herbs.
