- 1.5 pounds uncooked chicken breasts
- 1 cup uncooked orzo

Instructions
- Sauté chopped celery, carrots, and onion in butter and olive oil over medium-high heat for 5-7 minutes until softened.
- Stir in minced garlic and cook for an additional 30 seconds. Add flour and cook for another minute to create a roux.
- Gradually pour in chicken broth while stirring until the flour dissolves completely. Add Italian seasoning and uncooked chicken breasts; bring to a boil.
- Lower the heat, cover slightly with a lid, and simmer for about 15 minutes.
- Stir in uncooked orzo and cook uncovered for an additional 10 minutes or until tender, stirring frequently.
- Remove cooked chicken, chop into bite-sized pieces, return to the pot, then stir in lemon juice, garnish with parsley, season with salt and pepper as desired.
