  • 1 cup dry green or brown lentils
  • 4 cups vegetable broth
  • 4 large potatoes, peeled and chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 carrots, sliced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 tsp thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened.
  2. Stir in garlic and sauté for about 1 minute.
  3. Add lentils, diced tomatoes (with juice), vegetable broth, thyme, and bay leaf; bring to a boil.
  4. Reduce heat to simmer; cook for about 25-30 minutes until lentils are tender.
  5. Meanwhile, boil chopped potatoes in salted water until tender. Drain and mash with butter, milk, salt, and pepper until smooth.
  6. Serve lentil stew generously over mashed potatoes.
