  • 4 sweet or hot Italian sausage links (butterflied)
  • 1 tablespoon extra virgin olive oil
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 yellow onion (diced)
  • 8 oz mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 6 oz shredded mozzarella cheese
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with foil.
  2. In a large skillet over medium-high heat, sear butterflied sausages until golden brown on both sides, about 6 minutes total. Transfer to the prepared baking sheet.
  3. In the same skillet, add olive oil and sauté diced bell peppers and onion until soft, around 5 minutes. Stir in sliced mushrooms and minced garlic; cook until tender. Add balsamic vinegar and mix well.
  4. Spoon the vegetable mixture over the sausages and top with shredded mozzarella cheese. Bake for 10–12 minutes until cheese is melted.
