  • 1 lb crab meat (lump or claw)
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken stock
  • 1 cup sliced okra (or 1 tbsp filé powder)
  • Cajun seasoning and hot sauce to taste

Instructions

  1. In a large pot over medium heat, combine flour and vegetable oil. Stir continuously for about 20–30 minutes until a deep brown roux forms.
  2. Add chopped bell pepper, celery, onion, and minced garlic to the roux; cook until soft and fragrant.
  3. Stir in the shrimp and crab meat along with stock and optional diced tomatoes; bring to a boil then reduce heat to simmer for about 45 minutes.
  4. Add sliced okra (or filé powder) and simmer for another 10 minutes until okra is tender.
  5. Finish with Worcestershire sauce and hot sauce according to taste preference. Serve hot over white rice.
