Ingredients
- 4 large carrots (about 1 pound)
- 3 large apples (about 1 pound)
- 1 onion
- 5 cloves garlic (or 1 teaspoon garlic powder)
- ¼ cup olive oil (or aquafaba)
- ¼ cup maple syrup
- 3 tablespoons stone-ground Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Preheat the oven to 425°F (220°C).
- Core the apples and chop them into ½” cubes. Cut the carrots into ¼” thick slices on the bias. Dice the onion and finely chop the garlic.
- In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme until smooth.
- Add the chopped carrots, apples, onions, and garlic into the bowl; toss until well-coated.
- Spread the mixture evenly on a baking sheet and roast for about 15 minutes. Flip everything over and continue roasting for another 10 to 15 minutes until tender.
