- ½ cup sun-dried tomatoes (roughly chopped)
- ½ to 1 cup vegetable broth
- 2 15-oz cans butter beans (drained)
- 1 cup chopped fresh spinach
- 1 cup heavy cream
- ½ cup grated parmesan
- 2 Tbsp chopped fresh basil
Instructions
- Heat 2 Tbsp unsalted butter in a large sauté pan over medium heat.
- Add the minced garlic along with salt, oregano, crushed red pepper flakes, smoked paprika, and ground black pepper. Cook for about 2 minutes until the garlic becomes fragrant.
- Stir in ½ cup of roughly chopped sun-dried tomatoes.
- Pour in vegetable broth—start with ½ cup and adjust later if needed.
- Add the drained butter beans to the mixture. Continue cooking on medium heat uncovered for about 5 minutes.
