  • 2 lb. boneless skinless chicken breasts
  • 1 cup yellow onion, chopped
  • 1 ½ cups diced tomatoes (with juice)
  • ¼ cup black olives, sliced
  • 2 tablespoons feta cheese
  • 1 teaspoon onion powder
  • ½ teaspoon coriander
  • ½ teaspoon paprika
  • crushed red pepper flakes (to taste)
  • Salt and black pepper (to taste)
  • 2 tablespoons ghee or olive oil

Instructions

  1. Preheat your oven to 400ºF (200ºC).
  2. In a mixing bowl, combine ghee or olive oil with onion powder, coriander, paprika, crushed red pepper flakes, salt, and black pepper. Add the chicken breasts and coat well.
  3. Heat a skillet over medium-high heat; sauté the marinated chicken until golden brown on all sides but not fully cooked. Remove from skillet.
  4. In the same skillet, cook chopped onions for 3-5 minutes until softened; add sliced garlic and cook for an additional 30 seconds. Stir in diced tomatoes.
  5. Return the chicken to the skillet and bake for about 20 minutes until it reaches an internal temperature of 165ºF (75ºC).
  6. Once baked, top with sliced black olives and crumbled feta cheese before serving.
