Ingredients
- 1 (15 ounce) can chickpeas (rinsed and drained)
- 2 mini cucumbers (chopped)
- 1 tablespoon red onion (chopped)
- 1 tablespoon fresh oregano (chopped)
- 1 tablespoon fresh parsley (chopped)
- 1/2 red bell pepper (chopped)
- 1 cup little tomatoes (halved)
- 1/2 cup Kalamata olives
- 3.5 ounces feta cheese
- 2 tablespoons olive oil
- 1/2 tablespoon lemon juice
- 1 clove garlic (minced)
- Salt & pepper (to taste)
Instructions
- Prepare the chickpeas by draining and rinsing them under cold water, then place them in a large mixing bowl.
- Chop the mini cucumbers, red onion, garlic, red bell pepper, and halve the little tomatoes. Add these to the bowl with the chickpeas.
- Finely chop the fresh oregano and parsley; sprinkle into the bowl along with Kalamata olives.
- In a small bowl, combine olive oil, lemon juice, and minced garlic to create the dressing. Pour it over the salad.
- Toss gently until everything is well-coated. Season with salt and pepper to taste.
