- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp red pepper flakes (optional)
- ½ cup cherry tomatoes, halved
- ¼ cup kalamata olives, sliced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh lemon juice

- Stir in chopped onion and minced garlic; sauté until translucent.
- Add diced bell pepper and zucchini; cook until tender-crisp.
- Sprinkle in cumin, smoked paprika, oregano, and red pepper flakes; mix well.
- Fold in cherry tomatoes and olives; heat through for an additional 1–2 minutes.
- Remove from heat; stir in parsley and lemon juice before serving.
