  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1 cup coconut milk
  • 3 large eggs
  • 1/2 cup sugar
  • 1/4 cup alcohol-free dark vanilla extract
  • 1 teaspoon ground cinnamon (plus extra for garnish)
  • Whipped cream for topping

Instructions

  1. Boil sweet potatoes in water for 15-20 minutes until tender; drain and mash into a smooth puree.
  2. In a large bowl, whisk together eggs, sugar, evaporated milk, condensed milk, coconut milk, dark vanilla extract, and ground cinnamon.
  3. Fold in the mashed sweet potatoes until well combined.
  4. Pour the mixture into a greased 9×13 inch baking dish and bake at 350°F (175°C) for 30-35 minutes or until set.
  5. In another bowl, mix remaining evaporated milk, condensed milk, and coconut milk. Poke holes in the baked cake and pour this mixture evenly over it.
  6. Allow the cake to soak for at least one hour before serving.
  7. Whip cream until soft peaks form and spread over the soaked cake; garnish with cinnamon if desired.
