  • 1 Cup Frozen Corn
  • 1 Can (10 Ounces) Diced Tomatoes and Green Chilies (Rotel)
  • 1 Packet (1 Ounce) Taco Seasoning
  • 2 Cups Shredded Cheddar Cheese
  • 1 Box (8.5 Ounces) Jiffy Cornbread Mix
  • 2 Eggs
  • ⅓ Cup Whole Milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a cast iron skillet over medium heat, brown the ground beef and drain excess grease.
  3. Stir in cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; cook for 5 minutes.
  4. Sprinkle 1 cup of shredded cheddar cheese on top of the mixture.
  5. In a separate bowl, combine Jiffy cornbread mix with eggs and milk until just mixed.
  6. Pour the cornbread batter over the beef mixture evenly.
  7. Bake for 20-25 minutes until golden brown.
