  • 1 tablespoon cooking oil
  • 8.5 ounces canned corn (drained)
  • 1.5 cups cooked chicken, shredded
  • 8 ounces salsa
  • 15 ounces black beans (rinsed and drained)
  • 2 cups shredded colby jack cheese
  • Fresh cilantro leaves
  • Diced tomatoes

Instructions

  1. Preheat oven to 400°F (200°C). In a frying pan over medium heat, add cooking oil. Fry each tortilla for about 30 seconds per side until golden brown and crispy. Drain on paper towels.
  2. In a mixing bowl, combine shredded chicken with taco seasoning mix. Add canned corn and black beans; mix well.
