Instructions

  1. Stir together graham cracker crumbs, sugar, salt, and melted butter until the mixture resembles wet sand.
  2. Spoon 2–3 tablespoons of the crumb mixture into each jar. Press down firmly with the back of a spoon to form an even base.
  3. In a cold mixing bowl, whip heavy cream until medium-stiff peaks form. Chill while preparing the cheesecake filling.
  4. In another bowl, mix softened cream cheese with powdered sugar, vanilla extract, and lemon juice until smooth and fluffy (about 1–2 minutes).
  5. Gently fold the whipped cream into the cream cheese mixture in two additions until no streaks remain.
  6. If desired, divide the filling into portions and tint with pastel gel food colors for a spring-like appearance.
  7. Use a piping bag or spoon to fill each jar with cheesecake filling over the crust. Leave some space at the top for toppings.
  8. Cover each jar and refrigerate for at least 2 hours or up to 24 hours to let them set properly.
  9. Just before serving, add coconut 'grass,' sprinkles, and place mini chocolate eggs on top so they stay crisp.
  10. Hand out mini spoons along with each jar. Enjoy this creamy delight layered with crunchy goodness!
