  • 2 tablespoons brewed coffee
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons brewed coffee
  • 1 tablespoon plant-based milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine melted butter and sugar until blended. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and brewed coffee.
  3. In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually mix dry ingredients into wet ingredients until just combined.
  4. Pour the brownie batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out mostly clean. Allow cooling in the pan.
  5. Prepare the frosting while cooling by beating softened butter until creamy, then gradually adding powdered sugar and mixing in brewed coffee and plant-based milk until smooth.
  6. Once brownies are completely cool, spread coffee frosting evenly over the top.
