  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for cinnamon swirl)
  • 1 tablespoon cinnamon (for cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix together zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and spices.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Prepare the cinnamon swirl by mixing sugar and cinnamon in a small bowl.
  6. Pour half the batter into the loaf pan; sprinkle half the cinnamon mixture over it. Add the remaining batter and top with the remaining cinnamon mixture.
  7. Use a knife to create swirls in the batter gently.
  8. Bake for 60-65 minutes or until golden brown and a toothpick comes out clean.
