Ingredients
- 4 assorted bell peppers
- 2 cucumber slices
- 2 mini bell peppers
- 2 cups lettuce
- 1/2 cup shredded carrots
- 1 radish
- Handful of small broccoli florets

Instructions
- Slice the tops off the bell peppers and deseed them. Set aside the tops.
- Create monster eyes by inserting a green olive onto each half of a broken toothpick and inserting it into the top of each pepper.
- In a mixing bowl, combine lettuce, shredded carrots, cucumbers, radish, and broccoli florets. Toss with your chosen dressing.
- Fill each bell pepper with the salad mixture and use cucumber slices or mini pepper halves as tongues.
- Place the tops back on the peppers and serve immediately.
