- ¼ teaspoon fine sea salt
- 175 grams soft light brown sugar
- 2 large eggs (at room temperature)
- 200 millilitres vegetable oil
- 200 grams carrots (peeled and coarsely grated)
- 100 grams walnut pieces (roughly chopped)
- 75 grams crystallised ginger (finely chopped)
Instructions
- Preheat your oven to 170°C (325°F) and prepare a springform cake tin.
- In a bowl, mix together the flour, baking powder, bicarbonate of soda, ground ginger, and salt.
- In a separate bowl, beat the sugar, eggs, and oil until combined. Gradually add the dry mixture.
- Fold in grated carrots, walnuts, and crystallised ginger until evenly mixed.
- Pour batter into the prepared tin and bake for 45–55 minutes or until golden brown.
- Allow to cool before icing with your choice of frosting.
