  • 2 tbsp olive oil
  • 1 bell pepper (cut into chunks)
  • 1/2 cup diced onion
  • 1 tbsp minced garlic
  • 4 tbsp soy sauce
  • 3 tbsp brown sugar
  • 2 cups pineapple tidbits or chunks (without juice)
  • 2/3 cup pineapple juice
  • 1.25 cups chicken broth
  • 2 tbsp cornstarch

Instructions

  1. Select the sauté function on your Ninja Foodi. Heat olive oil and sauté diced onion until soft (about 3 minutes). Add chicken pieces; cook until browned.
  2. Stir in minced garlic and cook for another minute. Add ginger powder, red pepper flakes, and salt; mix well.
  3. Pour in soy sauce, brown sugar, pineapple juice, and chicken broth; stir gently.
  4. Add pineapple pieces and bell pepper chunks, mixing until combined. Turn off the pot.
  5. Seal the lid, close the steam valve, and set to pressure cook on high for 6 minutes. Perform a quick release once done.
  6. Set back to sauté; whisk cornstarch with water until smooth, then stir into the pot to thicken the sauce.
  7. Serve over rice or your favorite grains, drizzling with extra sauce.
