  • 1/3 cup cocoa powder
  • 1/4 cup sugar
  • 1 egg
  • 2 cups graham cracker crumbs
  • 3/4 cup shredded coconut
  • 1/4 cup butter (for filling)
  • 2 cups powdered icing sugar
  • 23 tablespoons milk
  • 1 teaspoon mint extract
  • Green food coloring (optional)
  • 2/3 cup chocolate chips
  • 2 tablespoons butter (for ganache)

Instructions

  1. Line an 8×8 inch pan with tin foil for easy removal.
  2. In a microwave-safe bowl, combine the first set of butter, sugar, and cocoa. Microwave until melted and combined; let cool briefly before whisking in the egg.
  3. Stir in graham cracker crumbs and shredded coconut until well mixed. Press into the prepared pan firmly.
  4. Beat the second set of butter until smooth; mix in powdered sugar and milk to desired consistency, then add mint extract and green food coloring. Spread over the crust.
  5. For the ganache, melt chocolate chips with butter in short intervals until smooth. Pour over the filling and refrigerate for at least 2-3 hours before slicing.
