- 1.5 pounds shrimp, peeled and deveined

- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- ½ cup heavy cream
- Juice and zest of 1 lemon
- Fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- Red pepper flakes to taste
- Salt and black pepper to taste
Instructions
- In a large oven-safe skillet, heat olive oil and butter over medium heat. Sauté diced onion until softened (about 5 minutes). Add minced garlic and optional red pepper flakes; cook until fragrant.
- Stir in orzo pasta, gently toasting for 1–2 minutes. If using, add white apple vinegar.
- Pour in chicken broth, lemon zest, salt, and pepper; bring to a boil then reduce heat to low. Cover and simmer for about 10–12 minutes until liquid is mostly absorbed.
- Stir in shrimp until submerged; cover again and cook for another 3–5 minutes until shrimp turn pink.
- Remove from heat; mix in grated Parmesan cheese and heavy cream until smooth.
- Finish with fresh lemon juice and chopped parsley; adjust seasoning if needed.
- Serve hot garnished with extra Parmesan cheese.
