  • Zest and juice of 2 large navel oranges
  • ¾ cup milk (room temperature)
  • ½ cup unsalted butter (softened to room temperature) for frosting
  • 8 ounces full fat block cream cheese (softened to room temperature)
  • 2 cups powdered sugar
  • Zest of ½ a large navel orange OR 1 tablespoon orange marmalade for frosting
  • ½ teaspoon vanilla extract for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Add orange marmalade, eggs, vanilla extract, and zest and juice of navel oranges; mix until fully incorporated.
  5. Gradually add in the dry mixture while alternating with milk until just combined; do not overmix.
  6. Pour the batter evenly into prepared pans and bake for about 26 minutes or until a toothpick inserted in the center comes out clean. Allow cooling in pans for 10 minutes before transferring to wire racks.
  7. For frosting: In a mixing bowl, combine softened butter and cream cheese. Beat until smooth. Gradually add powdered sugar, zest of navel orange or additional marmalade, and vanilla extract until creamy.
  8. Once the cakes are completely cooled, frost the top and sides of the cake as desired.
