- 1 cup granulated sugar
- 1 Tbsp orange zest
- 1/4 cup unsalted butter
- 1/2 cup full-fat sour cream
- 1/4 cup freshly squeezed orange juice
- 1 large egg
- 1/4 cup water
- 1 1/4 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp fine salt
- For the orange curd: 1/3 cup granulated sugar, 2 large egg yolks, 3 Tbsp orange juice, 1/4 tsp fine salt, 2 Tbsp unsalted butter
- For the frosting: 1 cup unsalted butter, 1 Tbsp orange zest, 1 tsp vanilla extract, 1/4 tsp fine salt, 3 1/2 cups powdered sugar, 3 Tbsp fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Cream together sugar and butter until fluffy. Mix in sour cream, water, orange juice, egg, and vanilla.
- In another bowl, sift flour, baking powder, and salt; fold into the wet mixture until just combined.
- Fill each liner two-thirds full and bake for about 19 minutes or until a toothpick comes out clean.
- For the orange curd, whisk sugar, egg yolks, orange juice, salt, and butter over low heat until thickened; strain to remove lumps.
- For the frosting, beat softened butter until creamy; gradually add powdered sugar and fresh orange juice until fluffy.
- Once cooled, hollow out the center of each cupcake and fill it with orange curd; frost generously.
