  • 1 Tbsp orange zest
  • 1/4 cup unsalted butter
  • 1/2 cup full-fat sour cream
  • 1/4 cup freshly squeezed orange juice
  • 1 large egg
  • 1/4 cup water
  • 1 1/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • For the orange curd: 1/3 cup granulated sugar, 2 large egg yolks, 3 Tbsp orange juice, 1/4 tsp fine salt, 2 Tbsp unsalted butter
  • For the frosting: 1 cup unsalted butter, 1 Tbsp orange zest, 1 tsp vanilla extract, 1/4 tsp fine salt, 3 1/2 cups powdered sugar, 3 Tbsp fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together sugar and butter until fluffy. Mix in sour cream, water, orange juice, egg, and vanilla.
  3. In another bowl, sift flour, baking powder, and salt; fold into the wet mixture until just combined.
  4. Fill each liner two-thirds full and bake for about 19 minutes or until a toothpick comes out clean.
  5. For the orange curd, whisk sugar, egg yolks, orange juice, salt, and butter over low heat until thickened; strain to remove lumps.
  6. For the frosting, beat softened butter until creamy; gradually add powdered sugar and fresh orange juice until fluffy.
  7. Once cooled, hollow out the center of each cupcake and fill it with orange curd; frost generously.
