  • 2 cups Old-Fashioned Rolled Oats
  • 1/2 cup Shredded Coconut (Unsweetened)
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 1/3 cup Maple Syrup
  • 1 3/4 cup Almond Milk
  • 1/4 cup Dairy-Free Greek Yogurt
  • 1 Flaxseed Egg
  • 1 tablespoon Chia Seeds
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Melted Coconut Oil
  • 2 1/2 cups Diced Peaches (fresh or canned and drained)

Instructions

  1. Preheat the oven to 350°F (180°C). Grease an 8-inch x 8-inch baking dish.
  2. Prepare a flax egg by mixing 1 tablespoon of flax meal with 3 tablespoons of lukewarm water; let it thicken for 10 minutes.
  3. Dice peaches and set aside.
  4. In a large bowl, whisk together the flax egg, almond milk, dairy-free yogurt, melted coconut oil, vanilla extract, and maple syrup until smooth.
  5. Stir in rolled oats, chia seeds, shredded coconut, salt, and cinnamon until well combined.
  6. Gently fold in diced peaches.
  7. Pour the mixture into the baking dish and add extra peach slices on top if desired.
  8. Bake for 35–60 minutes until set and golden brown on top.
