  • 3 large peaches, thinly sliced
  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground ginger (optional)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 stick butter, melted (1/2 cup)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, blend softened unsalted butter with brown sugar and salt until creamy. Gradually incorporate flour to form a crust mixture.
  2. Press the crust mixture into a greased 9×13 inch baking pan. Bake for 15 minutes until lightly golden.
  3. In another bowl, beat together softened cream cheese, sour cream, granulated sugar, eggs, and vanilla extract until smooth. Pour over the cooled crust.
  4. Spread peach jam over the cheesecake layer, then layer thinly sliced peaches on top.
  5. For the topping, mix flour, sugars, cinnamon, and melted butter until crumbly. Sprinkle over the peaches.
  6. Bake for an additional 35-40 minutes until set in the center. Let cool completely before slicing into squares.
