  • 38 oz. packages cream cheese (softened)
  • 1 cup granulated sugar
  • 1 ½ tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • ½ cup sour cream (room temperature)
  • ½ cup heavy whipping cream (room temperature)
  • 3 large eggs (room temperature)
  • ¼ cup salted butter (½ stick)
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 6 cups sliced fresh peaches
  • 2 tablespoons cornstarch
  • 1 package yellow cake mix
  • ½ cup salted butter (softened)
  • ½ teaspoon cinnamon
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust, then bake for 10 minutes.
  2. For the filling, beat softened cream cheese until smooth. Gradually add sugar and flour. Mix in vanilla extract, sour cream, and heavy whipping cream until smooth. Incorporate eggs one at a time.
  3. Pour the filling over the cooled crust and bake at 325°F (160°C) for 60-75 minutes until set.
  4. In a saucepan, cook sliced peaches with brown sugar, cornstarch, cinnamon, and butter until tender. Spread over cooled cheesecake.
  5. Combine cake mix with softened butter until crumbly; sprinkle over peaches. Drizzle with heavy cream and bake for an additional 15-20 minutes.
