  • 10 oz challah or French bread, cut into large chunks
  • 24 oz frozen sliced peaches, thawed and drained (or any fruit of your choice)
  • 1 1/4 cups almond milk
  • 5 eggs
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tsp light butter

Instructions

  1. Grease a 13×9 casserole dish and evenly layer bread chunks at the bottom.
  2. In a medium bowl, beat together eggs and granulated sugar. Add almond milk, vanilla extract, ground cinnamon, and kosher salt; mix until combined.
  3. Pour the egg mixture over the bread and press down to coat each piece.
  4. Cover with plastic wrap and refrigerate overnight.
  5. Preheat oven to 350°F (175°C), let the casserole sit at room temperature for about 15 minutes before baking.
  6. Evenly distribute thawed peaches on top of the soaked bread.
  7. In a small bowl, combine flour, brown sugar, light butter, and ground cinnamon until crumbly; sprinkle over peaches.
  8. Bake uncovered for 45-60 minutes until golden brown and set in the middle.
