Scale
  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into cubes
  • 1 cup heavy cream, plus additional for brushing
  • 1/2 teaspoon pure vanilla extract
  • 1 cup diced fresh peaches
  • 1 cup confectioners' sugar
  • 1 tablespoon honey
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Cut in the cold butter until it resembles coarse meal.
  4. In another bowl, whisk together heavy cream and vanilla extract; pour this mixture into the dry ingredients and stir until combined.
  5. Gently fold in diced peaches without overmixing.
  6. Transfer dough to a floured surface, knead lightly, and shape into a circle about 1 inch thick. Cut into triangles.
  7. Chill on the baking sheet for 15 to 20 minutes before brushing with cream and baking for 18 to 23 minutes until golden brown.
  8. While cooling, whisk together confectioners’ sugar, honey, vanilla extract, and milk for the glaze.
  9. Once cooled slightly, drizzle the glaze over the scones and serve warm.
