Ingredients

Scale
  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter
  • 16 oz (450 g) cream cheese, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup sour cream, room temperature
  • 1½ cups fresh peaches, peeled & sliced
  • ½ cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 6 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter; mix until evenly moistened. Press this mixture into the bottom of the prepared pan firmly.
  3. In a large bowl, beat cream cheese and sugar together until smooth. Add eggs one at a time while mixing well after each addition. Stir in vanilla extract and sour cream until fully combined. Pour this creamy filling over the crust.
  4. In another bowl, combine sliced peaches with flour, sugar, cinnamon, and nutmeg. Toss gently to coat all peach slices. Sprinkle this mixture evenly over the cheesecake layer and dot with cold butter pieces on top.
  5. Bake in your preheated oven for about 45-50 minutes or until the cheesecake is set and the topping is golden brown. Allow it to cool completely before cutting into bars.
