  • 2 lbs chicken thighs
  • 3 red bell peppers (sliced)
  • 1 jalapeño pepper (sliced, remove seeds for less heat)
  • 3 garlic cloves (peeled)
  • 1 red onion (sliced)
  • 1 tablespoon olive oil
  • Salt and black pepper (to taste)
  • 4 tablespoons lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (about 2 lemons)
  • 3 tablespoons smoked paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 4 tablespoons olive oil
  • 3 tablespoons red apple vinegar
  • 2 tablespoons honey (or brown sugar; optional)
  • A generous handful of fresh parsley (roughly chopped)
  • 2 teaspoons red pepper flakes (adjust to taste)
  • ½ cup chicken stock (or water)

Instructions

  1. Prepare the marinade by blending red bell peppers, jalapeño, garlic, red onion, olive oil, lemon juice and zest, smoked paprika, oregano, thyme, vinegar, salt, black pepper, and red pepper flakes until smooth.
  2. Marinate chicken thighs in half of the marinade for at least 30 minutes.
  3. Preheat grill to medium-high or oven to 400°F (200°C).
  4. Grill chicken skin-side down for 6–8 minutes per side or bake in a skillet with reserved marinade and chicken stock for 25–30 minutes until cooked through.
  5. Let rest before serving garnished with parsley.
