  • 1 cup jasmine rice
  • 1 cup fresh cilantro

  • 2 tablespoons lime juice or white vinegar
  • 1 tablespoon ground cumin
  • 2 cups chicken stock
  • ¼ cup onion, diced
  • 23 cloves garlic, minced
  • 2 tablespoons oil of choice
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 whole jalapeño chiles, roughly chopped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon or lime juice
  • 1 tablespoon butter/oil
  • 1 teaspoon turmeric
  • 1/4 teaspoon EACH cumin, onion powder, salt, pepper
  • 1 cup frozen peas

Instructions

  1. Marinate the chicken in a mixture of garlic, lime juice, oil, cumin, salt, and pepper for at least one hour.
  2. Preheat your grill to medium-high or oven to 450°F.
  3. Cook the marinated chicken until it reaches an internal temperature of 165°F (about 5-7 minutes per side).
  4. Rinse jasmine rice until water runs clear; soak for 10 minutes.
  5. Sauté onion and garlic in butter/oil; add rice and seasonings before adding chicken stock and cooking on low heat for 15 minutes.
  6. Blend cilantro, mayonnaise, jalapeños, garlic, olive oil, lemon juice, salt, and pepper to make the green sauce.
