  • 1 tsp cornstarch
  • 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)
  • Sesame seeds (optional)
  • Red pepper flakes (optional)

Instructions

  1. Heat olive or sesame oil in a skillet over medium heat. Sauté the diced chicken until fully cooked, about 5-7 minutes, then set aside.
  2. In the same skillet, add minced garlic and sauté briefly until fragrant. Pour in soy sauce, pineapple juice, honey or brown sugar, and vinegar; stir well.
  3. Mix cornstarch with water to create a slurry, then stir into the sauce mixture in the skillet. Cook for a few minutes until thickened.
  4. Return the cooked chicken to the skillet along with pineapple chunks and diced red bell pepper; mix well to coat all ingredients in the sauce.
  5. Stir in cooked rice until thoroughly combined and heated through.
  6. Garnish with chopped green onions, sesame seeds, or red pepper flakes if desired before serving.
