Ingredients
- 1 lb Chicken Breast (or thighs)
- 2 tbsp Olive or Sesame Oil
- 2 cloves Garlic, minced
- ½ cup Soy Sauce
- ⅓ cup Pineapple Juice
- 2 tbsp Honey or Brown Sugar
- 1 tbsp Rice Vinegar
- 1.5 cups Cooked Rice
- 1 cup Pineapple Chunks
- ½ Red Bell Pepper, diced
- ¼ cup Green Onions, chopped
Instructions
- Pat chicken dry, cut into bite-sized pieces. Heat oil in a large skillet over medium-high heat.
- Sauté chicken for 5-7 minutes until browned; remove and set aside.
- In the same skillet, sauté garlic for 30 seconds then add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir well.
- Mix cornstarch with water; add to sauce while stirring. Simmer for 2-3 minutes until thickened.
- Return chicken to skillet; add pineapple chunks, bell pepper, and green onions. Cook for an additional 2-3 minutes until veggies are tender.
- Serve over cooked rice with optional sesame seeds.
