  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic, minced
  • ½ cup Soy Sauce
  • ⅓ cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • ½ Red Bell Pepper, diced
  • ¼ cup Green Onions, chopped

Instructions

  1. Pat chicken dry, cut into bite-sized pieces. Heat oil in a large skillet over medium-high heat.
  2. Sauté chicken for 5-7 minutes until browned; remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds then add soy sauce, pineapple juice, honey or brown sugar, and rice vinegar; stir well.
  4. Mix cornstarch with water; add to sauce while stirring. Simmer for 2-3 minutes until thickened.
  5. Return chicken to skillet; add pineapple chunks, bell pepper, and green onions. Cook for an additional 2-3 minutes until veggies are tender.
  6. Serve over cooked rice with optional sesame seeds.
