  • 1 lb chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tbsp sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown (about 5–7 minutes). Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened (3–4 minutes).
  3. Add pineapple to the skillet and cook for another 2 minutes.
  4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is cooked.
  6. Return the chicken to the skillet and mix well. Heat through for an additional minute.
  7. Serve warm garnished with green onions and sesame seeds.
