- 1 cup pineapple, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tbsp soy sauce
- 1 tsp ginger, grated
- Salt and pepper to taste
- 1/4 cup green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until golden brown (about 5–7 minutes). Remove and set aside.
- In the same skillet, sauté onion, garlic, and red bell pepper until softened (3–4 minutes).
- Add pineapple to the skillet and cook for another 2 minutes.
- Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18–20 minutes until rice is cooked.
- Return the chicken to the skillet and mix well. Heat through for an additional minute.
- Serve warm garnished with green onions and sesame seeds.
