  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 can (20 oz) pineapple slices, drained and cut into small pieces
  • Maraschino cherries, halved
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin with parchment.
  2. In a small bowl, mix melted butter and brown sugar. Spoon into each muffin cup, then add pineapple pieces and half cherries.
  3. In a large bowl, cream softened butter and granulated sugar until fluffy. Beat in egg and vanilla.
  4. In another bowl, whisk flour, baking powder, and salt; gradually combine with wet ingredients to form dough.
  5. Press about 1 1/2 tablespoons of dough over the topping in each muffin cup.
  6. Bake for 12-15 minutes until edges are lightly golden.
  7. Cool for 5 minutes before flipping onto a cooling rack.
