- 1 ½ cups mascarpone cheese (cold)
- 1 cup heavy cream
- ⅓ cup powdered sugar
- ½ cup chopped pistachios (for decoration)
Instructions
- Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans lined with parchment paper.
- In a food processor, finely grind the pistachios. Combine them with flour, baking powder, and salt.
- Cream the softened butter and sugar until fluffy. Add eggs one by one, then mix in milk, oil, and extracts.
- Fold in the dry mixture until just combined. Divide batter between the prepared pans.
- Bake for 22–25 minutes until a toothpick comes out clean. Cool layers on a wire rack.
- Whip heavy cream until soft peaks form; fold in mascarpone and powdered sugar until smooth.
- Assemble layers with mascarpone cream in between; frost top and sides with remaining cream.
- Garnish with chopped pistachios and chill for at least 2 hours before serving.
