Ingredients

  • 8 flour tortillas (8-inch)
  • 2 cups shredded mozzarella cheese
  • 1 cup mini turkey turkey pepperoni slices
  • 1 cup pizza sauce
  • ½ cup sliced black olives (optional)
  • ½ cup diced green bell pepper
  • ½ cup sliced mushrooms (optional)
  • 1 teaspoon Italian seasoning
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. On each tortilla, spread about 1 tablespoon of pizza sauce, then layer with 2–3 tablespoons of mozzarella cheese, turkey turkey pepperoni, and additional toppings.
  3. Roll each tortilla tightly and place seam-side down in the baking dish.
  4. Pour remaining pizza sauce over the enchiladas and sprinkle with leftover mozzarella and Parmesan cheese.
