- 8 flour tortillas (8-inch)
- 2 cups shredded mozzarella cheese
- 1 cup mini turkey turkey pepperoni slices
- 1 cup pizza sauce
- ½ cup sliced black olives (optional)
- ½ cup diced green bell pepper
- ½ cup sliced mushrooms (optional)
- 1 teaspoon Italian seasoning
- ¼ cup grated Parmesan cheese
- 2 tablespoons olive oil or melted butter
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- On each tortilla, spread about 1 tablespoon of pizza sauce, then layer with 2–3 tablespoons of mozzarella cheese, turkey turkey pepperoni, and additional toppings.
- Roll each tortilla tightly and place seam-side down in the baking dish.
- Pour remaining pizza sauce over the enchiladas and sprinkle with leftover mozzarella and Parmesan cheese.
