Ingredients
- 1 1/2 lbs potatoes
- 1 1/2 tbsp olive oil
- 1/2 tsp salt
- 1/3 tsp pepper
- 1/2 tbsp taco seasoning
- 1/2 tbsp oregano
- 1 lb green beans
- 4 garlic cloves, minced
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the potatoes, then combine them in a mixing bowl with olive oil, taco seasoning, oregano, salt, and pepper. Mix until evenly coated.
- Spread the seasoned potatoes on a baking sheet and roast for 15 minutes.
- In the same mixing bowl (no need to wash), add green beans, remaining olive oil, minced garlic, and additional salt. Stir to combine.
- After 15 minutes, remove the potatoes from the oven and top them with the green bean mixture. Gently mix together.
- Return to the oven and bake for an additional 20-30 minutes until both vegetables are tender.
