  • 1 1/2 lbs potatoes
  • 1 1/2 tbsp olive oil
  • 1/2 tsp salt
  • 1/3 tsp pepper
  • 1/2 tbsp taco seasoning
  • 1/2 tbsp oregano
  • 1 lb green beans
  • 4 garlic cloves, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potatoes, then combine them in a mixing bowl with olive oil, taco seasoning, oregano, salt, and pepper. Mix until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet and roast for 15 minutes.
  4. In the same mixing bowl (no need to wash), add green beans, remaining olive oil, minced garlic, and additional salt. Stir to combine.
  5. After 15 minutes, remove the potatoes from the oven and top them with the green bean mixture. Gently mix together.
  6. Return to the oven and bake for an additional 20-30 minutes until both vegetables are tender.
