  • 1/4 cup brown sugar (for streusel topping)
  • 1/2 teaspoon cinnamon (for streusel topping)
  • 1/4 cup cold butter, cubed (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In one bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla; combine with the dry ingredients until just mixed.
  4. Prepare the cream cheese filling by beating cream cheese, sugar, and vanilla until smooth.
  5. For the streusel topping, mix all-purpose flour, brown sugar, cinnamon with cubed cold butter until crumbly.
  6. Fill muffin cups halfway with batter, add cream cheese filling on top, cover with more batter, and sprinkle streusel over each muffin.
  7. Bake for 18–22 minutes until a toothpick comes out clean; cool before serving.
