Ingredients
- 1 cup polenta (cornmeal)
- 2 cups vegetable broth
- 1 cup pumpkin puree
- 2 cups fresh spinach, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil

- Salt and pepper to taste
- Optional: 1 cup mozzarella cheese, shredded

Instructions
- In a large saucepan, bring vegetable broth to a boil. Gradually whisk in polenta until smooth and thickened. Stir in pumpkin puree.
