  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened) for frosting
  • 3/4 cup mascarpone cheese (cold or slightly softened)
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract for frosting
  • Pinch of salt for frosting
  • Unsweetened cocoa powder or cinnamon for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together softened butter, brown sugar, and granulated sugar until smooth.
  3. Mix in the egg and vanilla extract until well combined; then add pumpkin puree and espresso powder.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet ingredients until just combined.
  6. Drop tablespoon-sized portions onto a parchment-lined baking sheet.
  7. Bake for about 12 minutes or until edges are lightly golden.
  8. For frosting, beat together softened butter and mascarpone until fluffy; gradually add powdered sugar and vanilla extract.
