  • 6 large eggs
  • ½ cup light sodium soy sauce
  • ¼ cup water
  • ¼ cup vinegar (substitute for mirin)
  • 2 tablespoons granulated sugar

Instructions

  1. In a pot, bring water to a boil. Gently place the eggs in and boil for exactly 6 minutes.
  2. Immediately transfer the boiled eggs to an ice water bowl for about 15 minutes to cool.
  3. While cooling, mix together soy sauce, water, vinegar, and sugar until dissolved.
  4. Peel the cooled eggs gently and place them in the marinade ensuring they are fully submerged.
  5. Refrigerate for at least 8 hours (overnight is ideal). Enjoy in ramen or as a standalone snack!
