  • 1 1/2 cups fresh raspberries (plus more for garnish)
  • 1/2 cup raspberry jam
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 package (7 ounces) ladyfinger cookies
  • 8 ounces mascarpone cheese, softened
  • 1 cup heavy cream, cold
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • White chocolate shavings (optional, for garnish)

Instructions

  1. In a small saucepan, heat 1/2 cup raspberry jam, 1/4 cup water, and 1 tablespoon lemon juice over medium heat until smooth. Remove from heat and let cool.
  2. Lightly dip each ladyfinger into the raspberry mixture without soaking them, then arrange in an 8×8-inch dish.
  3. In one bowl, beat 8 ounces of softened mascarpone cheese until smooth. In another bowl, whip 1 cup of cold heavy cream with 1/3 cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
  4. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the fresh raspberries. Repeat layers with remaining ingredients.
  5. Cover and refrigerate for at least 4 hours or overnight before serving.
