  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup dark brown sugar
  • 1 tsp coarse kosher salt
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 cup cold, unsalted butter, diced
  • 12 oz rhubarb, diced
  • 1/4 tsp baking soda
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup strawberry jam
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking dish with non-stick spray.
  2. In a food processor, combine flour, oats, dark brown sugar, salt, baking powder, cinnamon, and cold butter until crumbly. Reserve 1½ cups for topping.
  3. Press the remaining mixture into the bottom of the baking dish and bake for 20 minutes until lightly golden.
  4. In a bowl, mix diced rhubarb with baking soda, granulated sugar, flour, strawberry jam, lemon juice, and vanilla extract.
  5. Spread the rhubarb mixture over the baked crust and return to the oven for an additional 30 minutes until bubbly.
  6. Sprinkle reserved topping over the filling and bake for another 20–25 minutes until golden brown.
  7. Allow to cool for at least two hours before slicing into squares.
