Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1/2 cup dark brown sugar
- 1 tsp coarse kosher salt
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 cup cold, unsalted butter, diced
- 12 oz rhubarb, diced
- 1/4 tsp baking soda
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 cup strawberry jam
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 baking dish with non-stick spray.
- In a food processor, combine flour, oats, dark brown sugar, salt, baking powder, cinnamon, and cold butter until crumbly. Reserve 1½ cups for topping.
- Press the remaining mixture into the bottom of the baking dish and bake for 20 minutes until lightly golden.
- In a bowl, mix diced rhubarb with baking soda, granulated sugar, flour, strawberry jam, lemon juice, and vanilla extract.
- Spread the rhubarb mixture over the baked crust and return to the oven for an additional 30 minutes until bubbly.
- Sprinkle reserved topping over the filling and bake for another 20–25 minutes until golden brown.
- Allow to cool for at least two hours before slicing into squares.
