  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved
  • 2 tbsp olive oil
  • 1/4 cup olive oil (for dressing)
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • 1 tsp honey (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread trimmed asparagus and halved radishes on a baking sheet. Drizzle with 2 tbsp olive oil and season with salt and pepper. Toss gently.
  3. Roast for 20–25 minutes, turning halfway through until tender and lightly browned.
  4. In a mixing bowl, whisk together whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, remaining olive oil, honey (if using), salt, and pepper until emulsified.
  5. Serve the roasted vegetables on a platter drizzled with the mustard vinaigrette.
