Ingredients

Scale
  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tbsp unsalted butter (melted)
  • 1/3 cup oil (canola or vegetable)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper, spread halved cherries on it, sprinkle with sugar, and roast for about 10 minutes. Allow cooling.
  2. Lower oven temperature to 325°F. Prepare an 8×8 baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, beat together sugar, eggs, melted butter, oil, and vanilla until fluffy.
  5. Fold in the dry ingredients gently until just combined.
  6. Mix in half of the roasted cherries and chocolate chips.
  7. Pour batter into the prepared pan and smooth the top. Bake for 40-50 minutes until edges are set but center is slightly underdone.
  8. Let cool completely before cutting into squares.
