  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup oil (canola or vegetable)

  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F (200°C) and roast halved cherries with a sprinkle of sugar on a lined baking sheet for about 10 minutes.
  2. Lower oven temperature to 325°F (165°C). In a bowl, sift together flour, cocoa powder, and salt.
  3. In another bowl, beat sugar with eggs until fluffy. Mix in melted butter, oil, and vanilla.
  4. Fold dry ingredients into wet ingredients gently; then add half the roasted cherries and chocolate chips.
  5. Pour batter into an oiled 8×8 pan, spreading evenly. Bake for 40–50 minutes until edges are set but center is slightly undercooked.
  6. Cool completely before serving; top with remaining roasted cherries.
