  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt for topping

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch pie pan and chill while preparing the filling.
  2. In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt. Stir over medium heat until thickened, then bring to a boil.
  3. Remove from heat and temper the egg yolks by gradually whisking in the hot cream mixture.
  4. Pour back into the saucepan, add honey and vanilla extract, and mix until smooth.
  5. Pour the custard into the chilled crust and smooth out.
  6. Bake at 375°F (190°C) for 40–45 minutes until slightly jiggly but set.
  7. Cool to room temperature, then refrigerate until fully chilled.
  8. Before serving, sprinkle with flaky sea salt.
