- 1/3 cup cornstarch

- 1/2 cup honey

Instructions
- Prepare the pie crust in an 8-inch or 9-inch pie pan and chill while preparing the filling.
- In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt. Stir over medium heat until thickened, then bring to a boil.
- Remove from heat and temper the egg yolks by gradually whisking in the hot cream mixture.
- Pour back into the saucepan, add honey and vanilla extract, and mix until smooth.
- Pour the custard into the chilled crust and smooth out.
- Bake at 375°F (190°C) for 40–45 minutes until slightly jiggly but set.
- Cool to room temperature, then refrigerate until fully chilled.
- Before serving, sprinkle with flaky sea salt.
