  • 6 beef sausages
  • 125g diced Smoked Turkey
  • 1 large white onion (diced)
  • 2 medium carrots (diced)
  • 2 cloves garlic (finely diced)
  • 480ml beef stock
  • 400g baby potatoes
  • Fresh chives for garnish
  • 3 tbsp butter
  • 3 tbsp plain flour
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1 beef bouillon cube (crumbled)
  • Salt (as needed)

Instructions

  1. Fry the diced Turkey in a large pan until crisp. Remove and set aside.
  2. In the same pan, brown the beef sausages, then slice into pieces.
  3. Sauté onions and carrots until soft, add garlic, then stir in butter and flour to form a roux.
  4. Gradually add beef stock while stirring, then mix in Worcestershire sauce, mustard, dried herbs, Turkey, and sausages.
  5. Pour into a baking dish and layer sliced baby potatoes on top.
  6. Bake covered at 180°C (350°F) for 30 minutes; uncover and bake at 200°C (400°F) for another 20 minutes until potatoes are tender.
