  • 4 cups low-sodium chicken broth
  • 1 medium onion, finely chopped

  • 2 tsp chili powder
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 cup shredded Pepper Jack cheese

Instructions

  1. If using dried beans, soak them overnight; if using canned beans, drain and rinse them.
  2. In a large pot over medium heat, heat olive oil. Sauté the onion and garlic until translucent (about 5 minutes).
  3. Add the soaked (or canned) beans and chicken broth; ensure the beans are covered by at least an inch of liquid.
  4. Stir in chili powder, salt, and pepper; simmer for about 30 minutes for dried beans or 15 minutes for canned.
  5. Mash some beans while leaving others whole for texture; stir until desired creaminess is achieved.
  6. Mix in cheese and cilantro before serving warm with tortilla chips or as a side dish.
